- Marinate your thawed, raw chicken in a marinade sauce. This will add flavor and keep the chicken moist and tender. You can use bottled marinades that are sold in most supermarkets, or you can make your own. Try mixing 1/2 cup of fresh orange juice with 1/4 cup of soy sauce, and add three cloves of minced garlic. Put the marinade in a shallow pan or in a ziplock bag and add four boneless chicken breasts. Allow the chicken to marinate for at least 1 hour in the fridge. Letting it sit for several hours will make it in even more flavorful. Turn two to three times during the marinating process. Bake in an oven safe dish or on baking sheet. This will serve four people.
- Cut two large skinless chicken breasts into small pieces about 2 inches long. Place the chicken in a ziplock bag or a shallow baking dish. Pour 1 cup of coconut over the chicken and allow it to marinate in the fridge for 3 to 4 hours. In a bowl mix 1/2 cup of Italian flavored bread crumbs with 2 tbsp. of grated coconut. Remove the chicken from the marinade and toss to coat in the coconut bread crumbs. Place on a cookie sheet and bake. This will serve two people.
- Try mixing together a few of your favorite spices and create a dry rub for your chicken. Try using 1 tsp. each of cumin, garlic powder, hot paprika and brown sugar, 1/2 tsp. of salt and a 1/4 tsp. of black pepper . Mix well and rub the seasoning mix directly onto the chicken. If you are using pieces with skin, rub the seasonings under the skin. Bake the chicken in an oven safe baking dish. This will make enough seasoning for two large breasts or four small ones.
- Remember that at 350 degrees Fahrenheit boneless varieties of chicken will take about 20 to 30 minutes to bake while bone in pieces will take longer, often 45 to 60 minutes. The inside of the meat should reach 170 degrees Fahrenheit.
